Triple Berry Syrup (Sugar or Sugar-Free!)

So I have recently made the change to cut out sugar from my diet.  I was completely addicted to sugar and my body was begging for a change.  Once I made my mind up it hasn’t been all that difficult with some other sweetening options.  One of the things my husband and I am enjoying lately are these protein pancakes, they are high in protein and don’t contain any flour in them.  The ingredients, when mixed together, sound disgusting but they are delicious. You can even add some cinnamon if you like that. We top them with fruit and a little of this berry syrup or sugar-free maple syrup.  Now you can always tweak this recipe to include sugar no problem.  Another of the things that I use every day with my new lifestyle is my Vitamix blender.  I have the Vitamix 7500 (which is $50 off right now)  I blend smoothies, pancake, and bread mixes, and I grind up flours (like almonds and coconut to make them into flours).  I have never had a nice blender before and I can’t tell you what a difference it makes.  If you use a blender constantly it is worth saving for.  Today I am going to show you how I make a berry syrup with my blender.

1.  To my Vitamix blender, I added 2 cups of frozen mixed berries.

2.  Next, I added 1 tsp. of vanilla, 2 pinches of salt, and 2 tablespoons of lemon juice.

4.  I secured the lid on the Vitamix and blended it at an 8.  Then I added 1/2 tbl. of stevia powder. Add more or less to your liking. At this point you can add any sweetener you want to it sugar, maple syrup, stevia, truvia, agave, etc.  Blend it at a 10 for 3 seconds.

5.  Once blended I poured it into a saucepan over medium heat.

6.  Once heated I added about 4 pinches of glucomannan which is a natural thickener.  You could also add a little pectin to thicken it as well.  Whip really well with a wire whisk to break down the thickener.  Cook over heat for 5-7 minutes until it thickens up.

Let it cool and pour into old syrup bottles or a mason jar.

We like our pancakes with a mix of berries and this poured on top.  You can also pour this on biscuits or top on ice cream.

The Vitamix blends it so well there is no need to strain the seeds.  It is really smooth.

Also since my pancakes aren’t made with flour, but rather oatmeal, the Vitamix is perfect to blend up the oats into oat flour.  I usually mix it at a 6 and then move it up to 8 for a couple seconds to get a fine oat flour.

I run hot water in the Vitamix and blend it with a dash of dish soap and rinse it well.  Only occasionally do I need to really wash it with a sponge.  For more information about Vitamix blenders and the different ones they have, as well as the features click here.

Serves: 16 oz.

Make this berry syrup sugar free or sugared, your choice. It is simple to make and delicious on pancakes, waffles, ice cream, muffins or biscuits.
Ingredients
