Shaved Brussel Sprout Salad with Parmesan Cheese and Almonds

I used to be the pickiest eater.  In fact my family will be shocked to see this recipe on my blog. About 3 years ago I decided I was done being picky.  I hated that characteristic of myself.  So I said I am just going to start eating things until I like them.  So I started with broccoli and just ate it over and over and over until I didn’t mind it anymore.  I learned a couple of things from this experience. First of all, your taste buds can change.  You can change your mind about what you like and don’t like.  Second, sometimes you have to eat things you don’t like for the health of your body.  Third, if you prepare it the right way you might like it.  Growing up my mom steamed all veggies to death and then drenched them in butter. UGH!  I realized I don’t like steamed veggies at all.  But roasting them crisps them up and I prefer them this way.  Along my “learning to love veggies” adventure I have come to love brussel sprouts.  I think they are my favorite.

I was having dinner with some friends at a restaurant called Cooper’s Hawk and they had an amazing brussel sprout salad.  This dish was created in an effort to copy that taste.  It isn’t perfect but it is a great side dish that I love serving with salmon or chicken.

Ingredients:

4 cups of shaved brussel sprouts

1/2 cup of shredded parmesan cheese

1/2 cup (pr more depending on taste) of extra virgin olive oil

1/4 cup of balsamic vinegar

1 tablespoon of lemon juice

1/2 cup of chopped almonds

1/2 tbl of sweetener (I am sugar free so I use this sweetener)

 

1.  Heat your balsamic vinegar in a small saucepan.  Dissolve your sweetener in there and boil for a few minutes so it thickens up. Set aside to cool.

2.  Wash and chop the base off your brussel sprouts.  The easiest way to shaved them is to pulse them in a food processor.

3.  Add the parmesan cheese and chopped almonds to the shredded sprouts.

4. Right before serving as the lemon juice, olive oil, and sweetener balsamic vinegar.

Serves: 4

This is a great salad year round and so easy to put together. It is a knock-off of the Cooper's Hawk Shaved Brussel sprout salad they currently have on their menu
Ingredients
  • 4 cups of shaved brussel sprouts
  • ½ cup of shredded parmesan cheese

  • ½ cup of chopped almonds
  • ½ tbl of sweetener
Instructions
