Green Thumb

Well it is official! I have a green thumb!!!! This is the very first harvesting of a vegetable that I have grown in my entire life. I am a true gardener now. Look at my pretty green leaf lettuce!!!

I took great care of her and washed each one of her little leaves individually…

and made a killer salad! I can’t take credit for this recipe. But for those of you who know me well, if I am eating salad you know it is good!

Christy’s Colorful Salad

Iceberg lettuce
Spinach red Leaf lettuce
Romaine lettuce
broccoli
cashew halves
dried cranberries
red delicious apple

Mexican Dressing:
1 cup sugar
1 cup Wesson canola oil
1/3 cup apple cider vinegar
1/4 cup orange juice
1/2 teaspoon pepper
1 teaspoons salt
1 tablespoons onion flakes
1 tablespoons prepared mustard
2 tablespoons mayonnaise

1.Using any of the combination above prepare salad for the amount of servings you need. Right before serving, add cashews, apple and dressing. Use the dressing sparingly. I use about 1/2 cup on the entire salad. You can always add more dressing, go light the first time around.
2. Blend all the dressing ingredients together the day before using. Store in a container until ready to use.

I must say my lettuce tasted very leafy. I am guessing with all the stuff they use on the lettuce in stores it must take away the flavor or something. Tim liked it a lot better but it tasted rather vegetable-y for me. I still liked it but store bought is milder for my tastes.
