This GF Flaxseed Bread will blow your mind like it blew mine for sure. The easiest and quickest bread ever and gut friendly!
The idea of making homemade bread is for me like a dream and lately I am getting more and more into it. Check this crunchy artisan Non-gluten loaf I made. But, let’s face it, I feel lazy most of the time. Well, not anymore!
Honestly, try it, I beg you. This recipe will make ONE individual bun which is what I am having now (obsessed). Still to try in a big batch and make a big loaf which would be perfect for fluffy sandwiches.

Ingredients:
- 1/2 cup Ground Flaxseeds (golden or dark)
- 2 eggs
- 1/2 Tsp of baking Powder
- Pinch of Salt
These are the base, however, I add some Chia seeds to the mix and to the top and planning to add many other things next.
How to Make the GF Flaxseed Bread in the Microwave
First of all you need to grind the Flaxseeds. I have bought myself this amazing grinder that has a great capacity. You can use it to grind a whole packet and store in a mason jar or, like me for now, just do as you go as it is so quick.
And then follow these four steps:
Step 1
Beat the eggs
Step 2
Add 1/2 cup of the grounded flaxseed
Step 3
Add 1/2 Tsp of Baking Powder
Step 4
Mix well and grease the bowl you are using (it has to be good for microwave)
I use Coconut Oil spray, that is why is so white haha but I am buying soon Olive Oil Spray as I think it’ll go even better.
And that IS IT. Let it rest for 5 min (if you have the time) and bake in the microwave for exactly 2 minutes.
And Voila!
It only needs to cool down a little bit before you release it from the bowl.
What to have the Flaxseed Bread with?
Well, I’ll be updating this post as I go.
So far, a bit of ham and tomatoes, vegan butter and jam, olive oil and cinnamon (I am weird like that)…
And I made these cuties this morning. With the same amount of ingredients, just divided in two containers. They look like little muffins!
Flat Flaxseed Sandwich
Somehow I wanted to make it like a sandwich but finding a microwave friendly container that shape was challenging. But I found it! I used the lid of a Tupperware, lol.

- 1 Mixing Bowl
- 1 Bowl Microwave friendly
Ingredients
- 1/2 Cup Grounded Flaxseed
- 1/2 Tsp Baking Powder
- 2 Eggs
- 1 pinch Salt
Instructions
