Shaved Brussel Sprout Salad with Parmesan Cheese and Almonds

This is a great salad year round and so easy to put together. It is a knock-off of the Cooper's Hawk Shaved Brussel sprout salad they currently have on their menu
  • 4 cups of shaved brussel sprouts
  • ½ cup of shredded parmesan cheese
  • ½ cup (pr more depending on taste) of extra virgin olive oil
  • ¼ cup of balsamic vinegar
  • 1 tablespoon of lemon juice
  • ½ cup of chopped almonds
  • ½ tbl of sweetener
  1. Heat your balsamic vinegar in a small saucepan. Dissolve your sweetener in there and boil for a few minutes so it thickens up. Set aside to cool.
  2. Wash and chop the base off your brussel sprouts. The easiest way to shaved them is to pulse them in a food processor.
  3. Add the parmesan cheese and chopped almonds to the shredded sprouts.
  4. Right before serving as the lemon juice, olive oil, and sweetener balsamic vinegar.
