I have found it! The Easiest Gluten Free Pancake Recipe Ever! Still cannot believe these can be so delicious and so easy and quick to make. Just using my portable smoothie blender!
These exact recipe will make you 6 Gluten Free fluffy pancakes so it is perfect for two people on a Sunday morning.
The different toppings you can use are endless. Any fruit you might have needing to be used or any leftovers might surprisingly go well too.

These are what I used to make the Pancake Mix. No flour at all, just Gluten Free Oats and Ground Almonds.
- 40 gr. Ground Almonds
- 25 gr. GF Oats
- 1 large Egg (or 2 S/M)
- Approx. 65 ml. Almond Milk
- 1 Tsp of Honey
- 1/2 Tsp Baking Powder
And for the toppings, which are optional and totally up to the taste:
- Handful of Blueberries
- Maple Syrup
- Crispy Bacon
- Coconut Yogurt

Making the Pancake Mix
It is going to take you literally 5 minutes, honestly.
Add all the ingredients to the blender (check the video as well) and blend for a few minutes.
Yes, that simple!
Add a bit of coconut oil to the pan (or oil of your choice) and start making them. I promise THAT-IS-IT.
Don’t leave them unattended so they burn. We want that golden beautiful color like in the picture below.
Gluten Free Pancake Toppings
We had some leftover bacon in the fridge so decided to use it. Blueberries is always a great choice since they have amazing properties.
I buy them frozen so they are always fresh and ready.
And, since there is no sugar here whatsoever apart from some healthy honey – did you noticed?
We added some Organic Maple Syrup and a dollop of Gut Friendly Coconut yogurt.

- 1 Pan
Ingredients

- 2 Tbsp Maple Syrup
