Easy peasy crockpot Hillshire Farm Lit’l Smokies® potato soup. Yum! This is so painfully easy and what kid doesn’t love Lit’l Smokies? 

All you have to do is add ingredients and set your slow cooker and walk away for hours.

Don’t be scared off by adding Lit’l Smokies to your soup. If they are good enough for pigs in a blanket they are good enough for soup. I promise. {wink!}

And your kids will get a kick out of it.

Ingredients:

  • 4-5 potatoes cubes
  • 3 cups of chicken broth
  • 1 cup of heavy cream
  • 1/2 teaspoon salt
  • 1/2 cup diced onion
  • 1/3 cup chopped carrots
  • 10 oz package of chopped Hillshire Farm Beef Lit’l Smokies (found at Wal-mart in the refrigerated section)
  • 1/2 cup of canned Great Value corn (found at Wal-Mart)
  • 1/2 tablespoon of minced garlic
  • 2 cups shredded cheddar cheese
  • Optional: Parsley

Directions to Make the Potato Soup:

Step 1

Peel and cube potatoes. I like mine cut bigger, but my family complains they are too big.

So after taking every ones opinion into account I cut them bigger like I like them. {giggle}.

Add those to the crockpot.

Step 2

Dice onions and carrots and add to the crockpot.

Step 3

Add 3 cups of chicken broth and set the crockpot on low for 4 hours.

Step 4

After 4 hours add Lit’l Smokies, shredded cheddar cheese, heavy cream and corn. 

Cook for another half hour.

During this busy holiday season it is nice to have some recipes in your arsenal that are quick to make and everyone loves.
