Happy St. Patrick’s Day!  I hope you haven’t forgotten to wear at least a bit of green, today.  Celebrating our Irish heritage is a big deal for my family, so we’ve been counting down the days until St. Paddy’s.  Growing up, we would always eat corned beef and cabbage for dinner in honor of our heritage…but I know that combination isn’t appetizing to everyone!  How about focusing your St. Patrick’s day feast on the rainbow that leads you to the lucky leprechaun with a pot ‘o gold, instead?  I’ve found five ways to whip up a rainbow in your kitchen, today, and–as an added Irish blessing–I’ll be giving you a wee bit more inspiration, too!

1.  Rainbow Cake

2.  Rainbow Punch

Brandy at Gluesticks threw a St. Patrick’s Day party at her house, and came up with this darling rainbow fruit tray.  I love how she used marshmallows and bananas for the clouds.  Lots of options, here.

5.  Rainbow Jello

The girls at Our Best Bites are known for creative and delicious foods, and this jello in rainbow hues is no exception.  What a colorful, fun addition to any table!

I found this rainbow themed party at Kara’s Party Ideas, and just had to share it with you.  The buffet of rainbow foods is outstanding!  No recipes on this one, but the treats would be simple to recreate, I’m sure.  (Just between you and I, I’m in love with those chocolate dipped Oreos.)
