Inspired by Charm Lemon Coconut Waffles

Maybe the alternate title for this post should be “5 Ways to Avoid Using Your Oven, This Summer.” Tell me I’m not the only one who can’t stand the extra heat a casserole in the oven adds to an already stifling kitchen!  Temperatures aside, the availability and low cost of fresh produce during the summer months means it’s the perfect time to enjoy lighter fare like salads and sandwiches. With our newly stained deck becoming a place for us to enjoy spending more time outdoors, I need a few fun recipes for meals that we can enjoy indoors or out during summer’s hottest months.  Here are some recipes you can add to your summer fare, with these 5 Ways to Plan a Summer Menu.

1. Salad

One of my personal favorite things about summer is berries.  This salad recipe from The Cafe Sucre Farine is loaded with them!  Can’t you just taste those juicy berries?

2.  Sandwiches

If this open-faced sandwich recipe from Ezra Pound Cake tastes as good as it looks, then it must be amazing.  This sandwich looks like a work of art, with all of the colorful vegetables it contains.

3.  On a Stick

This new twist on the kebab comes from The Hungry Housewife.  Unlike a traditional kebab, this one doesn’t need any grilling, which make it fast and cool food for a hot summer evening.

4.  International

Basil offers this recipe for spring rolls.  Spring rolls make a great summertime meal, since they require very little cooking, use lots of fresh veggies, and can be eaten without utensils.  These are on my must-try list.

5.  Breakfast
