So recently I posted on Instagram and Facebook that I was making my weekly shredded chicken in the crock pot. I was shocked at how any questions I got about it. I thought everyone made shredded chicken in the crock pot weekly. Apparently I am in the minority. I will make it every Monday. I use it in salad, soups, chicken salad, quesadillas, chicken nachos, etc. It is nice to have a quick and healthy protein to throw in any dish. So just in case there are some of you out there that haven’t heard cooking chicken in the crockpot is a phenomenal idea here is how I do it.
So if you follow me on Instagram or Facebook you might remember that I am 7 months into a one year of healthy changes to my eating and diet. I have lost 30 lbs and gained a bunch of muscle. And I am up to running 6 miles in an 8:53 pace. WHAT??? Who is this girl! Now, I promise I am not going to turn into a health blogger, I am so under qualified to speak about that. But I am going to post some recipes and some things I am learning a long the way. I am super happy with the slow changes I have made and look and the feel the best I have ever felt. If you want to hear more about my tips and tricks check out this post where I talk about the things that have helped me.
I LOVE salsa. But it has to be good, fresh salsa. I love sweet salsa but don’t love the mango or the peach kind. I also don’t like it spicy. I used to love the Sweet Onion Salsa from Aldi until about a year ago when they stopped carrying the brand I liked and switched to another less yummy brand. I am not a huge fan of canned salsa either. I have tried every kind and it just doesn’t taste fresh enough for me. I know…I know…picky picky picky!
I have a big family on my mom’s side. If we are all in attendance it is well over 50 people. When we get together we always do potlucks, pitch-ins, a dish to pass, covered dishes…what do you call it? Basically we all bring a side dish or a dessert to share with everyone else. There are a few staples that need to be at our family gatherings or I am disappointed, namely Broccoli Salad, Strawberry Pretzel Dessert, and Oreo balls. Recently this beef made with giardiniera sauce is quickly becoming a family fave as well.
