Fall is my favorite season of the year. Crisp air, falling leaves, changing colors, sweater season and SOUPS! I have a few killer soup recipes that… kids and adults rave just the same. I thought I would share with you my favorite one.
This is a creamy soup that is perfect paired with some warm French bread or rolls.
Cream of Chicken With Rice Soup
2 cups of cooked chicken
1/2 cup of chopped onion
2/3 cup of cooked rice
2 3/4 cups of water
3 tsp. of chicken soup base or 3 chicken bouillon cubes
1/4 cup margarine
1/4 cup flour
1/2 tsp. pepper
1/4 tsp. salt
1 tbl. oil (olive or vegetable)
1/2 cup fresh mushrooms (optional)
2 cups of 2% milk (if you are trying cut calories skim milk works too)
1/4 cup plus 2 tbl. white wine
In a stock pot over medium heat sautÃ© the onion in the oil for 5 minutes. Add the mushrooms and cook for 5 more minutes. Add 2 3/4 cup of water with 3 tsp. of chicken soup base or 3 chicken bouillon cubes. Add salt and pepper and simmer, uncovered, for 15 minutes.
Meanwhile, melt the margarine in another saucepan and stir in the flour whisking until smooth. Slowly add milk stirring so it stays smooth with no lumps. Continue cooking until mixture is bubbly and thick.
