Fall is my favorite season of the year. Crisp air, falling leaves, changing colors, sweater season and SOUPS! I have a few killer soup recipes that… kids and adults rave just the same. I thought I would share with you my favorite one.
This is a creamy soup that is perfect paired with some warm French bread or rolls.
Cream of Chicken With Rice Soup
2 cups of cooked chicken
1/2 cup of chopped onion
2/3 cup of cooked rice
2 3/4 cups of water
3 tsp. of chicken soup base or 3 chicken bouillon cubes
1/4 cup margarine
1/4 cup flour
1/2 tsp. pepper
1/4 tsp. salt
1 tbl. oil (olive or vegetable)
1/2 cup fresh mushrooms (optional)
2 cups of 2% milk (if you are trying cut calories skim milk works too)
1/4 cup plus 2 tbl. white wine
Directions:
In a stock pot over medium heat sauté the onion in the oil for 5 minutes. Add the mushrooms and cook for 5 more minutes. Add 2 3/4 cup of water with 3 tsp. of chicken soup base or 3 chicken bouillon cubes. Add salt and pepper and simmer, uncovered, for 15 minutes.
Meanwhile, melt the margarine in another saucepan and stir in the flour whisking until smooth. Slowly add milk stirring so it stays smooth with no lumps. Continue cooking until mixture is bubbly and thick.
Add the milk mixture slowly to the broth mixture stirring. Add the chicken, rice and wine. Cook for 15 minutes stirring occasionally..

This is very close to the way I make mine. Yummy! I think maybe this will be dinner tonight; I was just wondering what to make.
I had no clue what to make tonight and I did not want to go to store. This will be perfect! I have all the ingredients on hand. We are not wine drinkers, so I think I will just add more broth or milk. Thanks for dinner tonight!
