I love having a freezer and was big into making freezer meals before moving here. When Isaac was born I had such a hard time getting healthy meals on the table with a seemingly needy infant at dinner time. So I started exploring freezer meal options and loved the time saver it became.
Since we have all this venison we had to buy a freezer anyway. I have already been looking for one after selling our last one (it became too small) before we moved from Washington. So we headed to Home Depot (because they had a deal going on) to purchase a new freezer. Now I don’t have to remind you of my bad luck with appliances, do I? Well no matter if they are new or not I will somehow find the only appliance with an issue. In typical “Beckie-style” here is our brand new freezer.
She’s a beauty isn’t she? She has a huge dent (that the pictures don’t show) across the entire front and the handle broken. I left the band-aid on her. HA HA! Nice…Home Depot is taking care of it though. Enough said. This is not about my horrible experience with appliances (I do have a repair man on speed dial though
that would be too long of a post.
Since we did not have a freezer and we were in transition I didn’t make a lot of freezer meals since our move. Now that we have a “new” freezer I am anxious to fill it. So today I made ravioli soup and spaghetti sauce. The recipe I used was from Once a Month Cooking by Mimi Wilson & Mary Beth Lagerborg ISBN: 1-56179-041-9. It is an oldie but a goodie. You can buy it at amazon used for about $4 shipped. I just noticed it was published by Focus on the Family…hmmm I did not know that. Anyway I have loved almost every recipe in this book.

I totally enjoy cooking but I am not a “neat” cook. I do not put things away as I use them. I completely trash my kitchen and when I am done I clean it all up. It was one of those genes that was passed down from my mom.
Now I have 3 ravioli soup meals and 5 spaghetti sauce meals. That should last me a couple of months. I love having these kind of meals on hand especially when I hear of a family who could use a hand. It is easy to just go through my freezer and see what I have to give. Tomorrow is chicken day. I am going to make Lemon Chicken, Chicken and Rice Pilaf, and Chicken Tetrazinni. That should set me for some quick meals for a while.



I too was so good for a while…with the frezer meal thing. I really need to get back on track! I think I’ll order the book. Thanks for the inspiration.

I have done freezer meals long before anyone talked about them. Then I got the book you wrote about, after I heard the gal on Dr. Dobson. Erika and Rachel’s favorites were Chinese Chicken Morsels, Pizza Roll-Ups and Spicy Pumpkin Muffins.
So fun to hear you are doing this. Reminds me of my “mommy years.”

Good morning! Just wanted to pass along that I, too, have the “Once a Month Cooking” cookbook and have made good use of it over the years. (Did you know it’s been updated several times? I wasn’t aware of that until a recent library trip when I checked out one way more updated than the one I have. The newer versions include a variety of additional recipes.) Our family really did enjoy the ravioli soup! Their absolute all-time favorite is oriental chicken

I just want to say you INSPIRE me…I am going to start to do these freezer meals. I had thought I was doing better at getting healthy meals, etc…but since my little guy #3 came along…we’re back to ‘winging’ it and I’m getting tired of that! Thanks for the many ways I believe you show me how to be more of a Proverbs 31 woman!!! And…it makes me feel good to know that you trash your kitchen much the way I do when I’m doing any cooking/baking!
